Order confidently — know every word on an English menu

From Sourov’s world: In my early days at Uccello in Sydney — a fine Italian restaurant in the Merivale group — a guest pointed at the menu and said: “Can I have the thing with the thing on top?” They were pointing at a dish they didn’t have words for. I smiled, but I understood completely. When I arrived in Australia in 2005 with very limited English, I had exactly the same problem the other way around. I had to learn 12 key food words within my first week of work. These are the words that make the difference.

Here are the three groups of vocabulary you need for any English-language restaurant:

🍽️ Course Structure

Word Meaning
starter / entrée the first (small) dish — soup, salad, etc.
main course the principal dish of the meal
dessert / pudding the sweet dish at the end
side dish an extra dish served alongside the main

🥩 How Meat is Cooked

Term What it means
rare very lightly cooked, red/pink inside
medium-rare slightly pink, warm in the centre
medium pink but mostly cooked through
well-done fully cooked, no pink, firm texture

🌱 Dietary Terms

Term What it means
vegetarian no meat or fish
vegan no animal products at all (no dairy, eggs, honey)
gluten-free contains no wheat, barley, or rye
allergen an ingredient that causes an allergic reaction

  • “I’ll have the soup as a starter, and the salmon for my main course.”
  • “How would you like your steak? — Medium-rare, please.”
  • “Do you have any vegan options on the menu?”
  • “Is there a gluten-free pasta available?”
