📖 From My Experience
The market in Saint-Pierre opens at six in the morning. I go on Saturdays. The colours are extraordinary — purple aubergines, yellow mangoes, red tomatoes, green beans. After eighteen years in professional kitchens in Sydney — The Ivy, Uccello, the Star Casino — I still find the best ingredient is knowing what you’re looking at. Food vocabulary was one of the first things I learned when I arrived in Australia unable to speak ‘proper’ English. If you can name it, you can ask for it.
